The harvest is exclusively handpicked between the last week of September and the first week of October. Fermentation takes 15-20 days in stainless steel vats at controlled temperature with frequent pumping over. The wine is aged in oak barrels for 24 months and then a further maturation in bottle for at least 4 months.  A wonderful handcrafted wine, it is richly fruity with black berries up front, leather, spice, game in the background and just the right amount of acidity and balance.
