Discarded Sweet Cascara Vermouth is a unique and flavourful vermouth made with cascara, the dried fruit of the coffee cherry. Cascara is often discarded as waste during the coffee production process, but Discarded Spirits saw an opportunity to repurpose this delicious and nutritious ingredient into a delicious and sustainable vermouth. Discarded Sweet Cascara Vermouth is made by first infusing cascara in neutral alcohol to extract its flavour. This infusion is then blended into a base of fortified wine along with other botanicals, including wormwood, gentian, and citrus. The result is a rich and complex vermouth with notes of dried fruit, spice, and citrus. Discarded Sweet Cascara Vermouth is versatile and can be used in a variety of cocktails. It is especially well-suited for classic cocktails that call for sweet vermouth, such as the Negroni, Boulevardier, and Espresso Martini. It can also be used to create new and innovative cocktails, such as the Discardier, which is a riff on the Boulevardier that uses Discarded Sweet Cascara Vermouth in place of traditional sweet vermouth. 

Tasting Notes 

Discarded Sweet Cascara Vermouth has a deep amber color and a rich, complex aroma. On the nose, there are notes of dried fruit, spice, and citrus. On the palate, the vermouth is full-bodied and sweet, with flavors of dried cherry, strawberry, dark chocolate, and red wine. The finish is long and lingering, with notes of figs and cinnamon. 

Cocktails 

Here are a few cocktail recipes that feature Discarded Sweet Cascara Vermouth: 

Negroni 
1 part gin 1 part Discarded Sweet Cascara Vermouth 1 part Campari Stir all ingredients together with ice in a rocks glass. Strain into a chilled coupe glass and garnish with an orange twist. 

Boulevardier 
1 part whiskey 1 part Discarded Sweet Cascara Vermouth 1 part Campari Stir all ingredients together with ice in a rocks glass. Strain into a chilled coupe glass and garnish with an orange twist. 

Espresso Martini 
1 part vodka 1 part Discarded Sweet Cascara Vermouth 1 part cold espresso Combine all ingredients in a shaker with ice. Shake vigorously until chilled. Strain into a chilled martini glass and garnish with three coffee beans. 

Discardier 
1.5 parts Discarded Sweet Cascara Vermouth 1 part whiskey 0.5 parts Cynar Stir all ingredients together with ice in a rocks glass. Strain into a chilled coupe glass and garnish with an orange twist.
