The Surrey Hills, an area of outstanding natural beauty, is now also home to the Silent Pool Distillers. Located on the Duke of Northumberlands Albury Estate, the distillery takes its name from the mythical, spring-fed pool from which it draws its water. It is our mission to create high quality, small batch, artisanal spirits of the very highest quality, using only the finest local ingredients. A sacred site linked to the 13th century, legend tells of a beautiful young woodcutters daughter who lived in the forest that surrounds the Silent Pool. One day she was bathing in the pool. Disturbed by the sounds of an approaching rider on horseback, she found herself without the time to recover her clothes from the bank and so, to protect her modesty, she moved towards the deeper part of the lake. The stranger on the horse saw her and, overcome by her beauty, he moved towards her and tried to lure her out of the water. Startled and frightened, the young woman screamed, and ventured further into the lake where, unable to swim, she drowned. The horseman galloped away, and disappeared into the forest. Folklore has it that the rider was none other than the evil and cowardly Prince John, unofficial Regent to his popular brother King Richard. To this day, the ghost of the drowned maiden is said to haunt the lake at midnight. Some say the girls pale figure has been seen floating eerily above the misty waters, whilst others claim to have heard her screams as she calls to her father for help. Most gins are produced by a simple process - a small list of botanicals are soaked overnight in neutral spirit, and then distilled in a pot still. Alternatively, for a lighter style of gin, a neutral spirit is distilled and passed through a basket of botanicals. With these processes, the only control over the flavour of the finished product is in the amount and the selection of botanicals used. Our Master Distiller Cory Mason wasnt satisfied with the inherent limitations of this process. With the combination of his bartending experience, built up over many years in the best bars and restaurants in New York, and his formal education and expertise as a Master Distiller with an MSc from Heriot-Watt University, Cory set out to research, experiment, challenge and push boundaries. "For our gin, the first step was research. We broke each individual botanical down to its very building blocks, identified the exact fraction of the flavour we wanted to use, and built a process around obtaining it. For our unique process of creation, a portion of our botanicals are bruised and macerated in our base spirit before being transferred to our still. These give the depth and mouthfeel, the heavy and rich flavour. Another portion is macerated in a higher proof spirit and then filtered out, leaving only the oils and aromatic compounds to be added to the distillation. These lend the gin its ethereal high nots of perfumed lime and subtle flowers. The final portion is added to our gin basket, which hangs inside the still. These are all fresh and give the gin its live and active flavour. In this group you find fresh citrus peel, a unique type of juniper, as well as a mix of flowers and bright fruit. These are the flavours that balance our gin, integrating and enlivening all of the other botanicals." CORY MASON Although the treatment of botanicals before distillation is not unique, to obtain the exceptional and distinctive flavour of Silent Pool Gin, we have to control the conditions under which all of the botanicals are distilled. Unlike other gins, Silent Pool Gin is distilled using a column. Through precise control over a series of plates and cooling pipes, we are able to separate the exact flavour we want from each botanical that we use. In this way, we can break down the botanical, and capture only the section of it that we want to use in our gin. "Silent Pool Gin is a classic gin at heart. It is full-bodied and fresh, with depth, clarity, and above all else flavour. Produced with 24 unique botanicals, Silent Pool Gin is a rich and clean juniper-driven spirit with floral layers of lavender and chamomile. Fresh nots of citrus and kafir lime are grounded with the subtle sweetness of local honey, creating a well-balanced gin that is both traditional and refreshingly individual." Distiller - CORY MASON
