Champagne Taittinger Comtes de Champagne Blanc de Blancs: A Symphony of Elegance

Experience the pinnacle of Champagne craftsmanship with Taittinger's Comtes de Champagne Blanc de Blancs. This exceptional cuvée, a testament to the house's dedication to excellence, is crafted exclusively from Chardonnay grapes sourced from the finest Grand Cru vineyards in the Côte des Blancs. It represents the purest expression of this noble grape, offering a complex and refined sensory journey.

Tasting Notes:

The Comtes de Champagne Blanc de Blancs presents a luminous pale gold colour, a prelude to the delicate, persistent stream of fine bubbles that rise gracefully to the surface. The nose opens with an inviting bouquet of white flowers – hawthorn and honeysuckle – interwoven with subtle hints of citrus zest, predominantly lemon and grapefruit. As the wine unfolds in the glass, these initial aromas are joined by notes of freshly baked brioche, a testament to the extended period of ageing on the lees. There's a distinct minerality present, reminiscent of chalk and wet stone, adding a layer of complexity and freshness. On the palate, the wine is remarkably dry and crisp, with a vibrant acidity that provides a backbone to the wine's structure. The flavours echo the aromas, with a core of citrus fruits complemented by a subtle nuttiness – think of toasted almonds and hazelnuts. The texture is incredibly fine and silky, coating the palate with a delicate mousse. The finish is exceptionally long and persistent, leaving a lingering impression of elegance and refinement. This Champagne is a masterclass in balance, showcasing the power and finesse of Chardonnay.

Serving Suggestions:

Serve the Comtes de Champagne Blanc de Blancs chilled, ideally between 8-10°C (46-50°F). A chilled Champagne flute is the perfect vessel to appreciate the wine's effervescence and aromatic complexity. Allow the wine to breathe for a few moments in the glass before taking your first sip, this will allow the aromas to fully express themselves. This Champagne is best enjoyed on its own as an aperitif, allowing its intricate flavours to take centre stage. However, its versatility also makes it an excellent partner for a range of dishes.

Food Matches:

The Comtes de Champagne Blanc de Blancs’ bright acidity and complex flavour profile make it a superb match for a variety of foods. Its natural affinity for seafood is undeniable. Oysters, particularly those from the French coast, provide a classic pairing. The briny minerality of the oysters complements the wine's own minerality, creating a harmonious balance. Other shellfish, such as scallops, prawns, and lobster, also work beautifully. The richness of the seafood is balanced by the wine's crisp acidity, preventing it from becoming overpowering.

Beyond seafood, this Champagne's versatility extends to other dishes. It pairs wonderfully with delicate white fish, such as sea bass or turbot, especially when prepared with a light sauce. The wine's citrus notes complement the fish, while its structure can stand up to the flavours of the sauce. It is also an excellent match for poultry, particularly roast chicken or guinea fowl. The richness of the poultry is balanced by the wine's acidity, while the subtle nutty notes in the wine complement the savoury flavours of the meat.

Cheese Pairing:

For a truly exceptional pairing, consider serving the Comtes de Champagne Blanc de Blancs with a mature Comté cheese. This hard, unpasteurised cheese from the Franche-Comté region of France offers a complex flavour profile with nutty, fruity, and earthy notes. The richness and slightly salty character of the Comté provides a delightful contrast to the Champagne's crispness and acidity, while the cheese's nutty undertones echo the wine's own subtle nuttiness. The combination creates a symphony of flavours on the palate, a testament to the art of food and wine pairing.
