The Xinomavro vineyards are spread throughout the region of Naoussa. Mandilaria grapes are coming from the vineyards of Santorini.
Limestone based in Naoussa and volcanic in Santorini.
The microclimate in Naoussa region is warm continental with the cooling winds from Mt Vermio being crucial for the quality of the grapes. In Santorini the climate is warm Mediterranean with short winters and long, dry and hot summers being tempered by the strong sea winds.
5th-10th of September Mandilaria in Santorini . 20th -22th of September Xinomavro from Naoussa.
Fermentation is taking place in stainless-steel. Mandilaria is vinified in Santorini and it is blended with Xinomavro in Naoussa.
