The Brewery produces 1,500 gallons of beer each week using malted barley milled on the premises, English hops, yeast and water. No sugars, colourings or additives are used except isinglass finings which settle the yeast sediment after brewing. The first pint of Ballard's was brewed in 1980 in the old cow house on our Sussex farm. The Brewery is managed by Carola Brown, and in 1988 the Brewery moved to new premises at the Old Sawmill in Nyewood.

Head Brewer, Francis Weston, has been with Ballard's since 1981. Francis holds a Certificate of Brewing Competence.

    Bird in Hand

In 1997, an unassuming young viticulturalist and winemaker, Andrew Nugent, chanced his arm in the emerging wine region of the Adelaide Hills. Andrew grew up next door to Penfolds at Magill and his formative wine years were spent in South Australia’s McLaren Vale. It was here that he honed his craft as a viticulturalist, vineyard manager and winemaker.

The Nugent family live and work on the picturesque property, reflecting the strong sense of community in the Adelaide Hills.

Andrew exudes a quiet but steely determination to grow Bird in Hand into one of the world’s great wineries. “We live and work at the winery. We know the best thing we can do for our community is grow and produce the best wine and olives we can. Our success will be our community’s success. A high tide lifts all the boats in the bay. At Bird in Hand we’ve assembled the best team of people, we’ve painstakingly selected the perfect terroir and we’re well on our way.”

The sense of community emanates from Andrews mother Joy, who is the visionary behind Nurse Link, providing palliative care in the home. She has now gone on to form NurseLink Foundation, a charity to advance nursing in the spirit of Florence Nightlingale and change the way we care for the frail and elderly.

    The Vineyards

In 1997, Andrew Nugent planted vineyards and an olive grove on 100 acres on Bird in Hand Road, Woodside. The road itself was named after the "Bird in Hand" gold mine that operated in the district in the 1850s.

Four hundred metres above sea level, the vineyards face north and boast deep, well drained red earth, formed from metamorphic rock.

To extend the winemaking range available to Bird in Hand, another vineyard in the famous wine-growing region of Clare has been aquired to provide fruit for world class Riesling and Shiraz.

    Champagne Gosset

    The GOSSET Charter of Excellence

Gosset's charter of excellence guarantees Gosset's noble quality to connoisseurs of great wine. This excellence, recognised for more than four centuries, is the reason for the world wide prestige and distinction of Gosset Champagnes. In it, the house of Gosset commits itself to respect its fundamental values and its traditions of prefection :
Any grapes destined for the Gosset cellars have to be hand picked and in perfect condition. They only consist of the the three varietals authorised in Champagne, the Pinot Noir, the Chardonnay and the Pinot Meunier.

Only the first pressings, also called "cuvées", are used for blending to make Gosset Champagne.
Some growths undergo their first fermentation in oak vats, to achieve their concentrated aromas and exemplary finesse. These vats are marked with the seal of the house of Gosset, as was done originally by Claude Gosset, alderman of Ay in 1630.

The first fermentation is never followed by a malo-lactic fermentation, which inevitably causes a loss of freshness, and this ensures that Gosset champagnes keep better.

The Gosset blends are made from the best growths of the Marne (Grand & Premier Crus), with an average of 95% on the official scale of growths.

All Gosset Champagnes are aged in bottles laid on slats in a deep cellar at a steady temperature. They are disgorged after an average of 5 years of aging, when they reach their peak.

Manual remuage (turning of the bottles) is still carried out at Gosset, and precedes the disgorging which is carried out in the traditional.way.

Before being shipped, Gosset Champagnes rest several months in the cool calm of the Gosset cellars.
All bottles which carry the Gosset collar contain a great Champagne, exclusively created by the house of
    Gosset at Ay-Champagne.

The great growths are sold in an "old-style" bottle identical to that used by Jean Gosset, another Ay alderman , this time in the 18th century. It is unique and instantly recognisable the world over.

Charter certified by Jean Pierre Mareigner, cellar master at Champagnes GOSSET.

    Cline Cellars

In the latter part of the 1800s, Oakley, Contra Costa County was a booming farming community with thousands of acres of orchards and healthy vineyards. Fred Cline's maternal grandfather, Valeriano Jacuzzi of pump and spa fame, called this place home. On summer visits to his grandparents, Fred learned both the love of agricultural life and the mysteries of vinifying grapes into wine. These lessons led Fred to obtain a degree in Agriculture Management from U.C. Davis. In 1982, with an inheritance from his grandfather, Fred founded Cline Cellars near Oakley, California. Here, he preserved and r estored many ancient vine sites to their rightful reign as premier California wine lands.

In 1991, Fred and his wife Nancy relocated the winery from Oakley to the Carneros region of Sonoma County on a historic 350-acre estate with new vineyards and facilities. While much of the cool Carneros region is planted to Chardonnay, Pinot Noir and Merlot, Fred pioneered the planting of Rhône varietals including Syrah, Viognier, Marsanne and Roussanne.

Fred's innovation and experimentation led to producing rich, distinctive Rhône-style wines and intense, flavorful Zinfandels for which he has garnered enormous acclaim. In 2007, our 2004 Sonoma Zinfandel was rated 91 pts by the Wine Spectator, the 2004 Bridgehead Zinfandel was rated 90 pts, and the 2004 Ancient Vines Mourvèdre was named, “One of the top 100 values of the Year” by Wine & Spirits,
    June 2007 issue.

    Langham Brewery

Langham Brewery is situated in Langham Lane, Lodsworth, West Sussex. The owners are James Berrow and Steve Mansley. These good friends had been brewing their own beer for over 25 years and in 2003 decided it was time to progress to commercial brewing and started looking for somewhere local to base a 10 barrel brewery.

They found the right 10 barrel plant when Wickwar Brewery expanded its production. At the same time Cowdray Estate offered them a superb 18th century granary at Langham stables in Lodsworth. Its excellent location near the A272 and the chance to say how they wanted the barn laid out was too good to miss. Work started on the granary in spring 2005 and by spring 2006 Langham Brewery was up and running.

The brewery is dedicated to producing the finest ales by using the highest quality ingredients and traditional brewing methods.

After test brewing different recipes and with expert input from David Smith, brewery consultant, Sundowner and Halfway to Heaven were born. The latest beer, Hip Hop, (blond hop infused), has proved an instant success and is the winner of the Western Sussex CAMRA beer of the Year 2007.

The brewery is licensed to sell to the general public and market awareness is growing due to entries in numerous local CAMRA and Independent beer festivals.

Langham Brewery is a member of SIBA, the Society of Independent Brewers, which applies a Code of Good Practice.
